i need all my curves to move clockwise, plus the mirrored ones, so I can use the piece tool to produce a block of the collar for layout. However, when mirroring the curves, they go in the opposite direction. I need help. I am a Mac user fyi.

You turn them when creating a piece by holding shift
or you can also turn them later in the properties dialog

Just to add my 2 cents.
As @nejcek74 has pointed out you can always follow the tooltips in the status bar when using tools.
