I have finally managed to draft a pattern for a jacket (copied sizing from my own jacket). When going from PIECE to LAYOUT, one of my pattern pieces is missing. Not sure how to rectify this.

In my experience, that generally means that it’s on a second sheet & I don’t have the layouts panel showing.

As @Pneumarian pointed out the piece may be on another layout page. If you click the Layout Pages it will show thumnails of all the pages with the pieces it rendered for each.
Also make sure all the pieces you want are selected to be included (visible) in a layout: If you uncheck a piece it will not be included in the layout. This feature is handy when a pattern may include say multiple sleeves, but you only want to print out 1 style.
